Swede 'Wilhelmsburger' (Organic)
This green-topped swede isn't the most attractive vegetable in our catalogue but its tasty and substantial - everything you could want in this comforting winter staple. It also makes a great addition to a veg garden because you can sow it fairly late in the year and harvest over winter.
Swede is thought to have originated from a chance cross between a turnip (Brassica rapa) and cabbage (Brassica oleracea). Introduced to England from Sweden, it was originally called the Swedish turnip which eventually became 'swede'. Its a classic ingredient in Russian, Scandinavian, Eastern European and Scottish cooking. Think neeps and tatties, or brown butter braised swede.
Sow: end May-June outside
Plant: June-July, 30cm spacing
Harvest: Autumn-winter
Kitchen: Pairs with woody herbs (rosemary, thyme, sage), spices (nutmeg, white pepper), aromatics (parsley, dill), fats (bacon, butter).
